
Crispy Toast with Chicken & Prawns
Makes 12 pieces (6 servings)
Ingredients
- 6 slices of Gardenia Low GI Nutri Multi-Grain Loaf (trim the crusts and cut each slice of bread into half)
- 125g Minced chicken
- 15g Spring onion, finely chopped
- 1 tsp Sesame oil
- 1⁄2 tbsp Ginger, finely minced
- 1⁄2 tsp Garlic, finely minced
- 1⁄2 Egg white
- 1/2 tsp Corn starch
- 1⁄2 tsp Light soy sauce
- 1⁄4 tsp Salt
- 1⁄4 tsp White pepper
- 125g Prawn, de-shelled and diced
Garnishing
- 1⁄4 Carrot, cut into flower shapes
- 1⁄4 Green chilli, cut diagonally to resemble leaves
- 4 strips Bread crust from 1 slice of bread, cut thinly
- 1⁄2 tbsp Sesame seeds


Method
- Preheat the oven to 180°C.
- In a food processor, place the minced chicken, spring onion, sesame oil, ginger, garlic, egg white, corn starch, soy sauce, salt and white pepper. Process until smooth.
- Remove chicken mixture from the food processor, and place in a bowl.
- Add the diced prawns to the chicken mixture. Mix to combine well.
- Spread about 1 tablespoon of the chicken and prawn mixture onto each half slice of bread.
- Decorate each piece with carrot, green chilli, bread crust and sesame seeds as desired.
- Place the pieces on a baking tray lined with baking paper, and bake in the oven for 15 minutes or until the chicken and prawn mixture is cooked and the toasts turn golden brown.
- Serve immediately, with sweet and spicy chili sauce on the side, if desired.
