Crispy Toast with Chicken & Prawns

Makes 12 pieces (6 servings)
Ingredients
  1. 6 slices of Gardenia Low GI Nutri Multi-Grain Loaf (trim the crusts and cut each slice of bread into half)
  2. 125g Minced chicken
  3. 15g Spring onion, finely chopped
  4. 1 tsp Sesame oil
  5. 1⁄2 tbsp Ginger, finely minced
  6. 1⁄2 tsp Garlic, finely minced
  7. 1⁄2 Egg white 
  8. 1/2 tsp Corn starch
  9. 1⁄2 tsp Light soy sauce
  10. 1⁄4 tsp Salt
  11. 1⁄4 tsp White pepper
  12. 125g Prawn, de-shelled and diced
Garnishing
  1. 1⁄4 Carrot, cut into flower shapes
  2. 1⁄4 Green chilli, cut diagonally to resemble leaves
  3. 4 strips Bread crust from 1 slice of bread, cut thinly
  4. 1⁄2 tbsp Sesame seeds

Method

  1. Preheat the oven to 180°C.
  2. In a food processor, place the minced chicken, spring onion, sesame oil, ginger, garlic, egg white, corn starch, soy sauce, salt and white pepper. Process until smooth.
  3. Remove chicken mixture from the food processor, and place in a bowl.
  4. Add the diced prawns to the chicken mixture. Mix to combine well.
  5. Spread about 1 tablespoon of the chicken and prawn mixture onto each half slice of bread.
  6. Decorate each piece with carrot, green chilli, bread crust and sesame seeds as desired.
  7. Place the pieces on a baking tray lined with baking paper, and bake in the oven for 15 minutes or until the chicken and prawn mixture is cooked and the toasts turn golden brown.
  8. Serve immediately, with sweet and spicy chili sauce on the side, if desired.
