Egg Avocado Sandwich
Ingredients
Gardenia Nutri-Ace Hearty Oat Wholemeal Loaf
1 avocado
2 eggs
Salt and black pepper
Method
Cut the avocado in half, remove the pit, scoop the flesh into a bowl.
Squeeze some lemon juice over the avocado, and add salt and black pepper to taste. Mash it up.
Boil eggs in boiling water for 15 minutes, let cool, slice them, and set them aside.
Heat up a pan, toast the bread until golden brown, and slice into half.
Spread avocado mash onto the toast and place it on the plate. Top with egg slices and garnish with black pepper and parsley. Enjoy!
