
Healthy Egg Sandwich Recipe
Ingredients
- 2 slices Gardenia Nutri-Ace Hearty Oat Wholemeal Loaf
- 2 eggs
- 1 tablespoon Greek yogurt
- 1 teaspoon Dijon mustard
- 1 small avocado, sliced
- 1 small tomato, sliced
- A handful of fresh lettuce
- Salt and pepper to taste
- A pinch of paprika (optional)
- 1 teaspoon olive oil


Method
- Boil the eggs for about 10 mins to make hard-boiled eggs.
- Prepare the egg mixture: In a bowl, mix the chopped eggs with Greek yogurt, Dijon mustard, salt, pepper, and paprika (if using). Mix until well combined.
- Toast the bread slices until golden brown.
- Assemble the sandwich:
- Spread the egg mixture evenly on one slice of toasted bread.
- Layer with avocado slices, tomato slices, and fresh lettuce.
- Top with the second slice of toasted bread.
- Cut the sandwich in half and serve immediately.
