Healthy Egg Sandwich Recipe

Ingredients
  1. 2 slices Gardenia Nutri-Ace Hearty Oat Wholemeal Loaf
  2. 2 eggs
  3. 1 tablespoon Greek yogurt
  4. 1 teaspoon Dijon mustard
  5. 1 small avocado, sliced
  6. 1 small tomato, sliced
  7. A handful of fresh lettuce
  8. Salt and pepper to taste
  9. A pinch of paprika (optional)
  10. 1 teaspoon olive oil

Method

  1. Boil the eggs for about 10 mins to make hard-boiled eggs.
  2. Prepare the egg mixture: In a bowl, mix the chopped eggs with Greek yogurt, Dijon mustard, salt, pepper, and paprika (if using). Mix until well combined.
  3. Toast the bread slices until golden brown.
  4. Assemble the sandwich:
    • Spread the egg mixture evenly on one slice of toasted bread.
    • Layer with avocado slices, tomato slices, and fresh lettuce.
    • Top with the second slice of toasted bread.
    • Cut the sandwich in half and serve immediately.
