Maja Pan Blanca

Ingredients
  1. 5 slices Gardenia Enriched White Bread
  2. ¼ cup Evaporated Milk
  3. ½ cup Condensed Milk
  4. 1 cup Coconut Milk
  5. 1/8 cup Cheddar Cheese, grated
  6. ½ cup Canned Corn Kernel

Method

  1. Toast Gardenia Enriched White Bread for 2 minutes or until lightly golden.
  2. Using a food processor or blender, blitz the toasted bread until fine. This will serve as cornstarch.
  3. Mix coconut milk, evaporated milk, condensed milk and the bread in a bowl. Stir until all the ingredients are well-combined.
  4. Pour the mixture into a pan and let simmer for 8 minutes. Then, add the corn kernel and cheddar cheese. Keep stirring until the mixture thickens.
  5. Pour the mixture in a baking tray. Flatten the top using a turner or spatula.
  6. Allow to cool then refrigerate for at least an hour or until it has set.
  7. Garnish with more grated cheese on top.
  8. Serve chilled.
