Mushroom Spinach Quiche

Ingredients

  1. Gardenia 100% Wholemeal Extra Soft & Fine Bread
  2. 1/2 onion
  3. 1.5 cups spinach
  4. 1/3 cup sliced mushroom
  5. Fresh lemon
  6. 2 large eggs
  7. 1/2 cup grated cheddar cheese
  8. 1/4 cup low-fat milk
  9. Salt & pepper
  10. Fresh Parsley

Method

  1. Sauté onions, mushrooms, spinach and douse with a little lemon juice.
  2. Whisk egg, milk, cheese and season with salt and pepper.
  3. – Use a rolling pin to flatten each slice of bread.
    – Lightly spray the muffin tin with cooking oil then press the bread into the muffin tin.
    – Place in oven for 3 minutes to toast till light golden brown.
  4. – Mix both egg and vegetable mixture together and then pour mixed mixture into each bread cup.
    – Immediately place in the oven so the bread doesn’t soak up the egg mixture.
  5. – Bake for 12-15 minutes in 180°C until the filling is set and becomes lightly golden.
    – Remove from the oven and rest for 5 minutes before serving.
    – Garnish with fresh herbs if desired.
