
Mushroom Spinach Quiche
Ingredients
- Gardenia 100% Wholemeal Extra Soft & Fine Bread
- 1/2 onion
- 1.5 cups spinach
- 1/3 cup sliced mushroom
- Fresh lemon
- 2 large eggs
- 1/2 cup grated cheddar cheese
- 1/4 cup low-fat milk
- Salt & pepper
- Fresh Parsley


Method
- Sauté onions, mushrooms, spinach and douse with a little lemon juice.
- Whisk egg, milk, cheese and season with salt and pepper.
- – Use a rolling pin to flatten each slice of bread.
– Lightly spray the muffin tin with cooking oil then press the bread into the muffin tin.
– Place in oven for 3 minutes to toast till light golden brown. - – Mix both egg and vegetable mixture together and then pour mixed mixture into each bread cup.
– Immediately place in the oven so the bread doesn’t soak up the egg mixture. - – Bake for 12-15 minutes in 180°C until the filling is set and becomes lightly golden.
– Remove from the oven and rest for 5 minutes before serving.
– Garnish with fresh herbs if desired.
