Raisin Bun Cupcakes

Ingredients
- 500 g butter
- 200 g sugar
- 30 ml water
- 100 ml egg white
- 6 Raisin buns (muffin tops to be cut away)
- Food colouring (Optional)
Method
- Boil water with sugar.
- Place egg white in a bowl and whisk till it forms a firm meringue.
- Pour in the boiled sugar syrup into the meringue and whisk again at high speed.
- Lastly, add in the butter and food colouring (optional). Mix well.
- Cut away muffin top of the raisin buns and leave aside for piping.
- Pipe about 30 g of cream onto the raisin buns.
