Raisin Bun Cupcakes

Ingredients
  1. 500 g butter
  2. 200 g sugar
  3. 30 ml water
  4. 100 ml egg white
  5. 6 Raisin buns (muffin tops to be cut away)
  6. Food colouring (Optional)

Method

  1. Boil water with sugar.
  2. Place egg white in a bowl and whisk till it forms a firm meringue.
  3. Pour in the boiled sugar syrup into the meringue and whisk again at high speed.
  4. Lastly, add in the butter and food colouring (optional). Mix well.
  5. Cut away muffin top of the raisin buns and leave aside for piping.
  6. Pipe about 30 g of cream onto the raisin buns.
