Tangy Fruity Bread and Tofu Stack

1 blockFirm tofu, cut into 8 slices
1Egg, lightly beaten
2 ringsCanned pineapple, drained
8 piecesCherry tomato
8 cubes Cucumber, de-seeded and cut into cubes
8 leaves Lettuce

Bread Crumb Mixture

1 tspPaprika powder
1/4 tspPepper

Tangy Fruity Sauce

QuantityIngredients
1 tspOil
1/4(35g)Orange, diced
30gCanned pineapple, drained, diced
1/4(35g)Tomato, deseeded and diced
1/4(100g)Cucumber, de-seeded and diced
1/3 cup Orange juice
1/8 tspSalt
1/4 tspPepper

Method

  1. Preheat the air fryer to 180°C
  2. Mix the bread crumbs with garlic powder, paprika powder, pepper and salt evenly. Set aside.
  3. Dip the tofu in egg, then coat with bread crumb mixture.
  4. Bake the tofu in preheated air fryer for approximately 8 minutes or until the tofu turns golden brown. (If oven is used, preheat the oven to 180 ̊C and bake the tofu for approximately 15 minutes or until the tofu turns golden brown)
  5. In a pan, heat oil over medium heat. Add in oranges, diced pineapples, tomatoes, cucumbers and orange juice. Sauté until just tender. Season with salt and pepper, and stir to mix well.
  6. Arrange bread, tofu, pineapple slice, cherry tomato, cucumber and lettuce in layers, as desired, secure with a skewer.
  7. Serve with tangy fruity sauce on the side.

Note:

  1. The bread cam be lightly toasted using toaster oven or air fryer.
  2. To make bread crumbs, tear the bread crusts into small pieces and bake or fry using air fryer until brown and completely dried out. Pound the bread crumbs or process using a food processor until bread crumbs are fine.
