Thyme Turkey with Root Vegetable Christmas Tart

Serves 4

Ingredients
  • 4 slices Gardenia Low GI Nutri Multi-Grain Loaf
For topping:
Thyme turkey
  1. 100g Turkey breast meat, skinless
  2. ½ tsp Dried thyme
  3. Salt to taste
Sautéed Root Vegetable
  1. 1 tsp Vegetable oil
  2. 100g Pumpkin, small dice
  3. 100g Zucchini, small dice
  4. ½ tsp Dried thyme
  5. A pinch Black pepper, ground
  6. 120g Low fat plain yoghurt
  7. ¼ tsp Unsweetened cranberries, chopped

Method

  1. Preheat the oven at 180°C.
  2. Trim off the crust and edges of the Gardenia Low GI Nutri Multi-Grain Loaf, then thinly slice across each bread in half with a bread knife.
  3. Press each slice of bread into a lightly greased muffin pan.
  4. Bake the bread for 10 mins. Remove from oven and set aside to cool.
  5. Meantime, season the turkey breast with thyme and salt.
  6. Steam the turkey breast for 8 mins and set aside to cool. Then shred into thin shreds.
  7. Heat a non-stick pan with a little oil and sauté the root vegetables with thyme for 3 mins until slightly softened. Season with a dash of pepper.
  8. To prepare the tarts, place 1 Tbsp of yoghurt as the base, followed by 1 Tbsp of shredded turkey and top with 1 Tbsp of sautéed root vegetables.
  9. Garnish with some chopped cranberries at the top and serve immediately.
Chef’s tips:

Cube the crust edges of the bread and bake them at 180°C for 10 mins and use these as croutons to top your soups.
